These Bourbon Elite trees, planted over a century ago, embody the passion and perseverance of Diego Baraona. A natural mutation of the Typica variety, now rare in El Salvador, they have withstood the test of time. While others replaced their trees to fight leaf rust, Diego chose to preserve his family’s legacy. On his farm, traditional expertise meets modern techniques to produce an exceptional coffee, carefully sorted and packed on site. The result is a cup that supports sustainable practices while honoring El Salvador’s rich coffee heritage.



We were fortunate to meet Diego Barahona and discover his iconic farm, Los Pirineos. We even had the opportunity to spend a night in his house, perched above the farm; a peaceful place, full of serenity. The work Diego does there is simply outstanding, reflecting his deep commitment and passion for coffee.
